How to make Atsara Sauce

1. Prepare all the ingredients: 1/2 kilo green papaya, carrots, red pepper, garlic, onion, 1 can of pineapple chunk (or you can use pineapple tidbits), 2 tablespoon of sugar and 1 cup of vinegar.

2. Start cooking: a.) First, boil the vinegar in a small casserole, then add the sugar. wait until it boils then try to taste, if the vinegar is not so sour for your taste then its done. Let it be cold.

3. Remove the skin of the green papaya and chop it into half. Get a grater and start grating the papaya.

4. After grating all the papaya, wash it all in water, squeeze until water is gone. Do it for 3 times. Make sure the papaya is very dry. (Note: when papaya is very very dry it will sip the vinegar easily and will be tastier)

5. After washing papaya, place it on a bowl then start slicing garlic, onion, carrot (amount base on how much you need) and bell pepper.

6. Mix all the ingredients together with the papaya.

7. Take the vinegar in the casserole and put some pineapple juice together with it. You can also chop the pineapple chunks into small pieces to add a good taste. Then pour the vinegar to the bowl of the mixed ingredients.

8. You can now put your Atsara sauce in an empty bottle. Keep on your refrigerator.
